When I moved into my first grown-up flat, I realised I had free choice: anything I wanted, whenever I wanted it. I chose maraschino and glacé cherries. I ate so many that I couldn’t look at them for years, though I always kept a gorgeous jar of the luxe ones in the cupboard, just in case. I can eat them again now, and I’ve learnt restraint. Mostly. Sometimes. So here is a whole box you can’t eat: strawberries and cherries in deep maraschino red and strawberries-and-cream blush, glossed like the cherry on a soda-fountain sundae.

The lore

  • The real thing. The first maraschinos were small, dark Marasca cherries from the Dalmatian coast, preserved in their own liqueur. When war reached Zadar, a member of the Luxardo family escaped to Italy with a cherry sapling and the recipe. Priorities.

  • Who gets the name. In 1912, American food inspectors ruled that only Marasca cherries preserved in maraschino could be sold as maraschino cherries. The glowing red ones on your sundae came later.

  • The Prohibition myth. Everyone says the alcohol-free maraschino was invented for Prohibition. The colleagues of the professor who perfected it say that’s nonsense. We’ll let you decide over a Shirley Temple.

What’s in it, and what isn’t
NZ beeswax and soy, coloured with German-made candle dye, with a cotton wick, finished with a water-based candle gloss. That’s the whole list: no fillers, no nasties. No fragrance either. Not “natural fragrance”, not a “botanical blend”. None.
